Sauteed Celery (goes well with Salmon)
- 8-10 celery stalks
- olive oil
- 4 cloves of garlic, minced
- 1 Tbsp soy sauce
- 1 Tbsp rice vinegar (can substitute with white wine vinegar or apple cider vinegar)
- 2 Tbsp fresh parsley, or 2 tsp dried parsley
- black pepper
- chili pepper flakes
- onion powder or chopped onion to taste
Wash celery stalks and cut in roughly 1/4-inch pieces.
Mince garlic and parsley and set aside.
Heat oil in a large pan over medium-high heat. When hot, add dry minced garlic and cook for a couple of minutes.
Add chopped celery, soy sauce, rice vinegar, parsley, black pepper,chili pepper flakes, and onion.
Cook for 8 minutes, stirring occasionally.
If needed, add some water and put on the lid to steam to remove crunch.
NOTES: Leftovers can be kept in an airtight container in the fridge for 3-5. Eat cold or reheat in the microwave or on the stovetop.
