Broccoli Quiche
- 1/2 head broccoli
- 1/2 onion
- 1/3 red bell pepper
- 2/3 cup grated cheese
- 6 eggs
- 1/2 cup greek yogurt
- 2/3 cup milk
- 1/2 teaspoon kosher salt
- pepper to taste
- pinch ground nutmeg
- 2 Tbsp chives
Dice onion, broccoli, and red pepper. Place in bottom of pie plate.
Sprinkle cheese over veggies.
Mix together eggs, yogurt, milk, salt, pepper, and nutmeg. Carefully pour mixture over cheese & veggies. Top with chives.
Bake 350F for 35 min.
