Chocolate "Pure" Protein Bars

  • 1 1/2 cups quick oats
  • 1/2 cup milk
  • 1/4 cup natural peanut butter
  • 1/4 cup unsweetened cocoa powder
  • 2 scoops chocolate protein powder (about 60g)
  • 1/4 cup chia seeds
  • 1/2 tsp salt
  • 1/4 cup sugar-free maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup water (as needed)
  • 1/4 cup chopped nuts or seeds (optional)

Preheat your oven to 350°F and line an 8x8 inch baking dish with parchment paper.

In a large bowl, mix together the oats, almond milk, peanut butter, cocoa powder, protein powder, chia seeds, salt, and chopped nuts or seeds (if using).

Add the sugar-free maple syrup and vanilla extract, and mix until well combined.

If the mixture is too dry, add water as needed to reach a moist but not too wet consistency.

Transfer the mixture to the prepared baking dish and use a spatula to press it down evenly into the pan.

Bake in the preheated oven for 18-20 minutes, or until the edges start to turn golden brown.

Remove the pan from the oven and let it cool for 10 minutes before cutting it into 8 even bars.

Store the bars in an airtight container in the refrigerator for up to 1 week.
