Cheesecake (baked)

Ingredients

  • CRUST:
  • 1 cup graham wafer crumbs
  • 1/4 cup melted margarine
  • 1 tablespon sugar
  • FILLING:
  • 1 lb (500g) cream cheese, softened
  • 1/2 cup sugar
  • 1/4 cup flour
  • 4 eggs, separated
  • few grains of salt
  • 1 cup whipping cream
  • 1 teaspoon vanilla

Instructions

Wrap the outside of a 22” springform pan with tin foil.

Using a wooden spoon, combine cream cheese, sugar and flour. Add salt.

Beat in egg yolks and mix thoroughly.

In a separate bowl, whip cream and vanilla until stiff. Gently blend in to cream cheese mixture.

Fold in beaten egg whites.

Pour filling into crust. Place pan in larger pan filled with ~2 inches of water (this will keep the top of the cake from cracking).

Bake at 300 degrees F for 1 hour and 15 minutes. Let cool in closed oven.

Refrigerate 4 hours before serving. Serve with topping of your choice.
