Bruschetta (balsamic)

Best if the mixture has 1 or 2 hours to blend flavors before serving.

  • 2½cups roma tomatoes, minced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • ¼ cup grated Parmesan cheese
  • 1 shallot, finley chopped
  • ⅓ cup chopped fresh basil
  • 2 tablespoons balsamic vinegar
  • ½ teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 loaf French bread
  • olive oil

Prepare tomatoes: remove seeds and cut the flesh into small dice.

Place in small mixing bowl and add remainder of ingredients. Mix thoroughly and let sit for at least 15 minutes at room temperature to let the flavours marinate.

Cut French bread in half length-wise and drizzle with olive oil. Toast in 350°F oven for about 10 minutes or until lightly browned. Let cool on the baking sheet. Top with tomato mixture.
