Bran Muffins

  • 3 cups milk
  • 3 tbsp lemon juice or vinegar
  • 1 cup vegetable oil
  • 3/4 cup liquid honey
  • 3 eggs
  • 4 1/2 cups (324g) all-bran cereal
  • 4 1/2 cups (540g) flour
  • 1 cup chocolate chips (or 1 1/2 cups raisins)
  • 3/4 cup brown sugar
  • 3 tsp baking soda
  • 1 1/2 tsp baking powder
  • 3 tsp cinnamon

In large measuring bowl, put in lemon juice/vinegar. Fill to three cup line with milk. Stir. Set aside for five minutes. Add oil, honey, eggs beaten with fork, and bran cereal to the milk-vinegar mixture.

Combine remaining ingredients in a separate bowl. Stir liquid mixture into dry ingredients, just until moistened. Spoon batter generously into greased muffin tins.

Bake at 375F for 20 minutes.
