Black Bean, Avocado & Corn Quesadillas

  • 1 15oz can black beans, drained
  • 1 cup corn
  • 1/3 cup salsa
  • 2 tsp taco seasoning
  • 1 cup shredded mozzarella cheese
  • 2 avocados
  • 8 tortillas

Mix together first six ingredients.

Preheat skillet over medium-low heat. Spray with cooking spray.

Place tortilla in skillet, scoop 1/2 of the filling and spread. Place second tortilla on top.

When bottom tortilla starts to brown, flip the quesadilla and brown second side.
