Banana Bread

  • 1 egg
  • 2/3 cup packed brown sugar
  • 1 cup mashed overripe bananas (about 3)
  • 1/3 cup buttermilk or sour milk (see note)
  • 3 tablespoons vegetable oil
  • 1 teaspoon vanilla
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup(?) chocolate chips

In mixing bowl combine egg, sugar, bananas, buttermilk, oil, and vanilla. Beat well with whisk until thoroughly blended.

In small bowl stir together flour, baking soda, and salt. Add to banana mixture and stir just until combined.

Pour into very lightly oiled 9x5 loaf pan.

Bake at 350F for 50-55 minutes or until tester inserted in centre comes out clean. (If using dark colored non-stick pan bake at 325F).

Let cool in pan for 5 minutes then turn out onto rack and cool completely.

note: to sour milk, pour 1 tsp vinegar into measuring cup and add milk to make 1/3 cup; let stand 5 minutes.
