Baked Beans with No Added Sugar
- 2 cups dry navy beans
- 2 large yellow onions (450-550g), finely chopped
- 6 garlic cloves, very finely chopped
- 2 celery stalks, finely chopped (128g)
- 140-170g cooked smoked sausage or bacon
- 2 teaspoons ground cumin
- 2 large carrots (144g), grated or very finely chopped
- 2 cups vegetable stock
- 2 large or 4 small bay leaves
- 1 798ml can diced tomatoes
- 2 tablespoon dry marjoram or 1 1/2 tablespoon ground marjoram
- 1 teaspoon of salt, more to taste when beans finished cooking
- 1/2 teaspoon pepper, more to taste when beans finished cooking
Rinse beans under running, cold water. Place beans in slow cooker OR instant pot.
Add remaining incredients to slow cooker / instant pot.
Mix. Cover with a lid and cook in slow cooker for 7h on High setting or 10h on Low setting or in instant pot on bean/chili setting. They can be kept on "warm" setting for several hours.
When your baked beans are cooked, give them a really good mix. This will help to release a lot of starch and add to creaminess.
Add more salt or pepper if desired. Serve with fresh, chopped parsley or chives.
